Description of key information

At neutral pH (pH 7.4 in experiment) hesperidin is stable towards hydrolysis (DT50 > 60 days at 25 and 40 °C). At pH 9 DT50 of hesperidin is 23 days at 25 °C and 4.5 days at 40 °C.

Additional information

Hesperidin is stable in acidic and neutral pH conditions but undergoes hydrolysis at alkaline conditions. The difference shown between 25 °C and 40 °C shows that higher temperature enhances hydrolysis.

Half-life at pH 1.2, 3, 5 and 7.4 are >60 days (at 25 and 40 °C) whereas at pH 9 hydrolysis is observed resulting in a half-life of 23 days at 25 °C and 4.5 days at 40 °C.
