Enzymes are polymers of 20 different naturally occurring amino acids in various length and order
and the amino acid sequence determines the structure and physical properties. As a high molecular
mass biological polymer, enzymes have a high theoretical boiling point. The enzyme polymeric structure degrade and fragment before it boils, even at vastly reduced atmospheric pressures.
