Enzymes are polymers of 20 different naturally occurring amino acids in various length and order
and the amino acid sequence determines the structure and physical properties. When measured,
broad melting ranges are typically determined for enzymes because of the polymeric nature; the
complex primary, second and tertiary structures; and partial hydration. Thus, a classical melting point is not relevant for enzymes.
