Sucrose acetate isobutyrate (SAIB) is a complex UVCB and as such hydrolysis testing cannot be performed. Due to the substance's low water solubility it is also a difficult substance to test for many environmental endpoints. Ready biodegradation testing demonstrates that the substance undergoes ultimate biodegradation and is not persistent. While SAIB has a wide range of log Kow values representing its constituents and suggesting a potential for bioconcentration/bioaccumulation (log Kow 3.4 -7), its use in food has resulted in considerable data showing that the substance has appreciable ADME. This is also supported by QSAR modeling where biotransformation is taken into account and results in very low BCF/BAF predicted values.
