L-Glutamic acid is deprotonated at pH>4 (COOH: pK1 2.19, pK2 4.25; NH3+: pK3 9.67 at 20 °C, obtained from the Merck Index 12th Edition) so at environmental and physiological pH it is present in the form of L-Glutamate.
