Isomaltulose greens consists primarily of the disaccharides isomaltulose and trehalulose, along with other sugars. It is a yellowish, hygroscopic solid. In melting point determinations the viscosity of the substance decreased with heating up to 40 degrees C, but then increased again at about 60 degrees C. Therefore, no exact melting point could be determined and it was estimated to be <40 degrees C. The density of isomaltulose greens was measured at 1.4944 at 20 degrees C.

The substance is very highly soluble in water, with a new study determining solubility in the range 1000 -10,000 mg/L. The log Kow value was determined to be less than -3.8, consistent with the very high water solubility. Isomaltulose greens have a very low vapor pressure, as evidenced by the vapor pressures of the two main constituents, isomaltulose and trehalulose, and the structural isomer, sucrose.
